Ingredients
- oil
- 2 seabass or bream fillets
- 2 slices root ginger , finely shredded
- 1 garlic clove , sliced
- zest and juice 1 orange
- handful coriander
Method
- Lightly oil a piece of baking parchment the size of a dinner plate. Put the fish fillet skin- side down in the centre and scatter over some ginger, garlic, orange zest and orange juice.
- Put in a steamer basket (it doesn't matter if the parcel flips up a bit at the edges), cover with the lid and steam for 5 minutes, more if the fish is big. Serve with black pepper and coriander scattered over.
