Ingredients:
250g (1.5 cups) brown rice
3 tbsp olive oil
juice of 1 lemon
250g (2 cups) cubed cooked chicken
1 fresh, ripe mango, peeled and cut into chunks
3 sticks celery, de-stringed and chopped
half red onion, finely chopped
Directions:
Cook brown rice until tender, about 30 mins. Drain and cool.
Whisk together the olive oil and lemon juice to make a dressing and toss through the rice.
Stir in the chicken, mango, celery and onion.
