Citrus Granola



2 cups oats, raw
4 tablespoons grapeseed, sunflower, or almond oil
1 cup shredded, unsweetened coconut
¼ cup raw almonds (chopped)
¼ cup raw walnuts, chopped
½ cup dried cranberries
Zest of 1 orange
½ cup pumpkin seeds (pepitas)
½ cup sunflower seeds
2 sticks cinnamon
½ teaspoon pure vanilla extract
3 tablespoons honey

Preheat oven to 300 degrees F. In a large bowl mix all of ingredients until well combined. Spread evenly over a sheet pan and cook for approximately 15 minutes, stir, then continue cooking for an additional 15 minutes. Remove from the oven, sneak a taste, and allow to cool before using...if patient.
