7 cups bite-size pieces fresh spinach
1/2 cup shredded coconut
11 oz pineapple and mandarin orange segments
1/3 cup orange juice
1.In large bowl, toss spinach, coconut and fruit.
2.Drizzle with orange juice. Serve immediately.

Chefs Note:
This salad looks pretty to the eyes but it's hard on the palette. I would never serve it as is to a house guest. The dry crisp spinach contrasted so harshly with the thin wet juice from the oranges. The coconut shavings (sugar free, raw meat) married well with the oranges, however. My recomendation would be to add a red onion and chicken to this salad. I think it has potential so I am not taking it down from my blog, but it definately needs something else.
